Recipe Exchange: Grandma’s Buckeye Candy

I was matched up with Nichole from the Guilty Parent for a great recipe exchange. She sent me the link to her Grandma’s Buckeye Candy and I sent her the link to my Chocolate Poundcake. So last night I made both!

Recipe: Grandma’s Buckeye Candy

Ingredients

  • 1 Stick of Parkay, softned
  • 1-2 lbs powdered sugar
  • 1.5 c. peanut butter
  • 1 tsp. vanilla
  • 12 oz your favorite chocolate
  • 1 stick of paraffin wax (Gulf Wax)

Instructions

  1. Mix butter, sugar, peanut butter and vanilla. Be sure to mix together well or you will have clumps of powdered sugar. Form peanut butter mixture into small balls about the size of a buckeye. (I generally start out with a mixer and then switch to using my hands, just like my grandmother did. It’s messy but it works well). I’ve come to notice that I use almost a whole bag of powdered sugar and a whole jar of peanut butter but that’s because I like (make that love) peanut butter.
  2. Refrigerate or freeze for at least an hour. (You want the peanut butter balls good and cold before you start dipping in the warm chocolate or they get soft and mushy.) Don’t worry that you’ve refrigerated or frozen too long; you really can’t leave the peanut butter balls in in the fridge “too long”.
  3. Melt chocolate and paraffin in top of double boiler. You can also melt this in a crock pot for easier dipping for the kids and set on low. I’m a horrible pot watcher (I tend to walk away and forget things) but you’ll want to stir the chocolate and paraffin often. The paraffin helps the chocolate set up better. It’s a good thing I have lots of kids to help with the melting and stirring!
  4. This is the kids’ favorite part! Stick a toothpick in the peanut butter ball and dip into the chocolate mixture, leaving part of the top uncovered. It will resemble a buckeye. Remember to keep your chocolate mixture warm so that it doesn’t start to harden. The warmer it is, the easier it will be to dip. 5. Freeze or refrigerate to set the chocolate. You can freeze them overnight if you like. I swear on all that is chocolate you WON’T HURT THEM. In fact, your buckeye candy may even last longer if no one can find them.

The recipe was taken directly from Nichole’s website, my notes are below.

I used my Kitchen Aid Mixer to do the job of mixing. Then made the balls with a melon baller to make them more uniform. The chocolate was melted in the microwave for a total of 6.5 minutes. When I make these again, I will skip the wax and go for Almond Bark. These were super easy, but I didn’t like the taste or texture of the chocolate, although I used my favorite brand. This made about 100 buckeyes by using the melon baller.

Dry Skin Help from Carmex

Double Ear Infections!

That’s what I’ve been dealing with this week. On Sunday morning I woke up with an aching ear. Monday I went to the doctor and then bam! On Tuesday it was doubled!

I’ve been sleeping a lot more than normal the last 3 weeks, since I’ve been sick and my house is really getting the worse bit of me…or very little of my time. From being tired to being dizzy, I’ve still tried to keep basics going like food, laundry and even a tiny bit of decluttering a few times a week.

Not being able to hear very well has kept me from answering the door, not something I’m very upset about in the least! I don’t care for company a lot, not unexpected company and much less delivery men that drop the package at the door anyways. So I guess that’s one good thing that’s come out of this sickness. :)

Hopefully by the start of next week, I’ll be back at my old self and start getting the massive amount of giveaways going before Christmas. It’s pretty hard to write up giveaways while sleeping! lol!

Now off to spend 15 minutes decluttering….joine me?
