Menu Plan Monday August 31-September 6 (Granola Bars)

August has been busier than I expected. I think Back to School sneaks up on me every year. We’ve been in school for 3 full weeks now, and everything is going well. Everything but getting the kids on a routine after school. We are trying, but heck, its just not working. This week we start cheer practice 3 days a week. The plan is to have a healthy snack in the afternoon while we start on homework. I will try to get everything up and running for dinner so that when we get home from practice, we will be able to eat and relax before bed.

On top of everything, I would like to make this a eat from the pantry and freezer week. I will need a few things I”m sure, but I think that I can make it through the week with only spending a few bucks on food.

Monday: Homemade Hamburger Helper

Tuesday: Homemade Soup

Wednesday:  Pot Luck at Church (trusty Chocolate Pound Cake)

Tuesday:Grilled Hamburgers and Homemade buns

Thursday: Leftovers

Friday: Kidless Weekend (Out or Pizza)

Saturday: Kidless Weekend (Hamburger at the Creek Bank Restaurant)

Sunday: Kidless Weekend (Steaks, Baked Potato and Salad)

Recipe: Chewy Granola Bars

Summary: This is my own creation, we LOVE it, change it to your liking.

Ingredients

  • 1 c. Brown Sugar
  • 2/3 c. peanut butter
  • 1/2 c. chocolate chips
  • 5 c. Oatmeal
  • 1 stick of Butter, melted
  • 1 t. vanilla
  • 1/2 c. Honey or corn syrup

Instructions

  1. Mix all ingredients
  2. firmly pack into a 13×9″ pan.
  3. Bake at 350 for 15-20 minutes or until the edges start to brown.
  4. *NOTE* You can substitute dried fruit or nuts for the chocolate chips (or anything you desire) and you can leave out the peanut butter also.

    Thanks for the granola bar recipe. If you do leave out the PB, do you need to up the honey/syrup to get the bars to stay together?

    Hi SnoWhite, thanks for asking. I wouuld go to Quaker.com and look through their recipes to get a better idea on that, but I don't think you would need more honey or syrup for it. I would try to mix it up without, and see how well it sticks together. You should be able to see if it will stick together well by making a ball with it. Add some honey if need be. The PB makes it more chewy than anything, so you should be good. Let me know how it goes.
