Cooking for Two, in a hotel no less.

This week I’m in Tuscaloosa, AL. We have a kidless week (maybe two) and decided to write papers in a corporate hotel room instead of staying home alone. Polka Spot Farm can get lonely when the kids are gone. The challenge this week is to cook without a grill (unless we can get permission from the hotel) or oven for at least 4 out of 5 nights. I’m going to try to stay in and save the money for shopping! I’ve already found one thrift store that I’d like to check out. Do you have any ideas on cooking for this week?

I’m used to cooking for a small army, so I need help cooking for two this week.

Monday: Stir Fried Chicken, salad

Tuesday: Pork Chops, Green Beans, Rice

Wednesday: Dinner and a movie…OUT

Thursday: Can you give me an idea?

Friday: And one more idea

Ideas…tacos, bbq beef or bbq chicken sandwiches..I buy lunch meat, then warm it in the microwave with BBQ sauce and plop it onto a bun or roll.
