Hi everyone! Happy Independence Day to all of you guys. This week we are doign a lot of swimming and fishing with 6 kiddos, so keep us in your prayers. Looks like there will be a lot of cooking outdoors.

Monday: Grilled Chicken Salad and Neen’s Homemade Ice Cream

Tuesday: Potato Soup

Wednesday: Breakfast at Church

Thursday: Grilled Chicken Salad

Friday: Red Beans

Saturday: Barbeque Mutton and Pork, and all the fixins!

Sunday: Leftovers

Recipe: Neen’s Homemade Ice Cream

Ingredients

  • 6 Eggs, Beaten
  • 2 cups Sugar
  • 1 Can Evaporated Milk
  • 1 Can Condensed Milk
  • 1 Quart Milk
  • Vanilla to taste

Instructions

  1. Beat eggs with electric Mixer
  2. Add sugar, mix
  3. Add Evaporated and Condensed Milk, Mix
  4. Add Vanilla
  5. Pour into Ice Cream Maker
  6. Add milk until mixture reaches fill line.
  7. Use the manufacturers directions to freeze your ice cream.

Meal type: dessert

Top 3 Tackles

This past week has been quite an adventure. There have been 3 big tackles that I’m quite proud of showing off to everyone.

#1 Tackle : With a lot of help from Karen at Simply A Musing Designs, I have a new blog design here at Polka Spot Farm. GO check it out and tell me what you think! Subscribe so that you can help celebrate later whenever I decide to throw a launch party.

#2 Tackle: I started a new blog. This blog is all about romance and how even when you think its all washed down the gutter, true love can find you. My Chick Flick is my personal love story. I have a wonderful meme starting soon, and challenges for your love life. Hope you can join us on our journey. Subscribe here to keep up with the never-ending love story.

#3 Tackle: The Tombigbee River. I love the outdoors, but have only recently been able to explore the local river. What I didn’t know is that the alligator population has gotten out of hand! I can’t remember how many alligators I’ve seen lately, but I have probably tripled the number I had seen in my entire life, just in the last week. Whew! glad that we made it out safe.

Its that time again…

School is out! What are your kids doing? Year before last my son spend a good amount of time playing catchup with a personal tutor. These guys were amazing. He gained over 3 years in reading (from Grade 2.2 to 5.3). I don’t have his math scores in front of me, but I know he excelled there as well. Menu for June 22-29 (Peach Cobbler Recipe)

This is another kidless week. My Prens and I have a fishing trip halfway planned because it looks like his job has panned out for a little while. So maybe we can cook some of our catch later on this week. So here goes for a grown up menu (can I really do it?)

Monday: Fried Fish, Cole Slaw and Peach Cobbler (easy recipe below)

Tuesday: Grilled Catch of the Day, fancy salad and french bread

Wednesday: Grilled Chicken Salad

Thursday: Easy Lasagna

Friday: Mexican

Recipe: Easy Peach Cobbler

Ingredients

  • 1 Large can of Peaches
  • 1 Cup Milk
  • 1 Cup Self-Rising Flour
  • 1 Cup Sugar
  • 1 Tsp. Vanilla

Instructions

  1. Pour peaches into a baking dish.
  2. Mix flour and sugar together
  3. Add milk and vanilla, stir until smooth
  4. . Pour over Peaches
  5. Bake at 350 degrees for approximately 25 minutes (until brown)
  6. Serve with homemade vanilla bean ice cream.

Meal type: dessert

The New and Improved Polka Spot Farm!

We are still in construction mode, but with a whole lot of help from Karen over at Simply A Musing Designs we have come a long way. So watch out for the shovel and pitch fork, and mind the the chickens running around.

The tentative timing  for the big blog launch will be the end of July. I have scheduled some great give always and will be my-own-psf-rooster2-copydoing a twitter party around that time also. Watch out on the “Front Porch” for updates.

Menu Plan June 15-21

My kids are home until the weekend! Yay! I’ve missed them so much. We’ve had an action packed weekend and starting the summer out right. We are going to be doing some de-cluttering and painting this week, so lunches will more thank likely be leftovers and pb&j. Hope you enjoy the menu and recipes. Monday: Grilled Chicken
Tuesday: Pizza Roll-Ups and Pizza Sauce (recipes below)
Wednesday: Church
Thursday: Mexican
Friday: Chicken and Dumplins
Saturday: Date Night
Sunday: Father’s Day His Choice

Recipe: Pizza Roll-Ups (OAMC)

Summary: Once A Month Cooking (Freezer Meal) A once a month recipe that is great for picnics or nights when the family has to eat in shifts. They can be eaten warm or cold. Makes 24

Ingredients

  • 1 loaf frozen French bread dough or italian bread dough or all purpose bread dough
  • 1 lb lean ground beef or turkey
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups grated part-skim mozzarella cheese
  • 1 teaspoon Italian herb seasoning
  • 1 tablespoon fresh parsley, chopped
  • 4 cups italian tomato sauce

Instructions

  1. Thaw dough; roll it into 14 x 24-inch rectangle about 1/4 inch thick.
  2. Brown ground beef or turkey; stir in remaining ingredients except Italian tomato sauce.
  3. Spoon filling evenly onto dough, slightly pressing filling into dough.
  4. Roll dough lengthwise like a jelly roll, and cut into 24 1-inch slices.
  5. Treat 2 rimmed cookie sheets with nonstick spray; lay slices on sheets about 1 inch apart.
  6. Preheat oven to 400°F. # 7 Let roll-ups sit for 10 minutes.
  7. Bake for 20-25 minutes or until golden.
  8. Cool roll-ups and freeze in 4 1 gallon bags, 6 per bag.
  9. Slip a 1 quart bag with 1 cup sauce into each bag of pizza roll ups.
  10. To prepare, thaw roll-ups and warm them in a preheated 400°F oven for 10 minutes or put them frozen in the microwave; heat on high for about 2 minutes.
  11. Serve with warmed Italian tomato sauce.

Recipe: Ultimate Pizza Sauce

Summary: SERVES 4 , 1 -2 pizzas

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 cup onion, chopped
  • 1/4 cup celery, chopped
  • 1 garlic clove, minced
  • 1 (8 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1 small bay leaf
  • 1 teaspoon fennel seed

Instructions

  1. In a large skillet, melt butter with the oil. Add the onion, celery and garlic and saute until soft and transparent.
  2. Add tomato sauce and tomato paste and stir until smooth.
  3. Add remaining ingredients and bring to slow simmer.
  4. Simmer for 30-60 minutes (or not at all depending on your taste and time frame).
  5. Remove the bay leaf and spread the sauce on your prepared pizza dough.

Number of servings (yield): 2

Bad Kitty, clean up the house!

The last two weeks have been fun filled for us all on the farm, including Weirdo the tom cat. While I was away for the weekend, Weirdo decided to destroy the house. Ive found broken glass, garbage cans turned over, medicine bottles everywhere from his little paws playing with them after pushing them out of the cabinet. There are things everywhere that arent supposed to be everywhere.  So when Mamas away, the cats will play.

I hope to have everything in place by tomorrow night that can possibly be put away. Thursday we are pulling up carpet so that we can finally finish the ceramic floors. Lots to do, lots to do. I need a list, timer and lots of encouragement. Come join me for spring cleaning in the summer…and pet adoption week on the farm :)
