MPM May 11-17 – Chocolate Pound Cake

To all the mom’s out there a belated Happy Mother’s Day! My kids made me breakfast in bed and gave me a wonderful cross necklace and hoop earrings. This was a great day after a week of sick kids and running around to doctors and on field trips. So this weeks menu will be followed closer than last weeks menu.

Monday: Chicken Nuggets

Tuesday: Tortilla Soup

Wednesday:  Chocolate Pound Cake for potluck (recipe below)

Thursday: Chicken and Dumplings

Friday: Pizza

Saturday: Out

Sunday: Hot Dogs

Recipe: Chocolate Pound Cake

Ingredients

• 2 sticks butter, softened
• 3 cups sugar
• 3 cups cake flour, sifted
• 1/2 pint whipping cream
• 6 eggs
• 4 T. cocoa
• 1 T vanilla
• pinch salt

Instructions

1. Beat butter and sugar
2. Add eggs 1 at a time
3. Add flour and cream (alternating)
4. Add vanilla, cocoa, and salt
5. Pour batter into greased, flour or sugar coated pan (I use Bundt)
6. Place in a COLD oven
7. Bake at 300F for 1 hr 15-30 minutes
