Hi Christie - here's the recipe I use, adapted from Nourishing Traditions.
1 c. buttermilk
1 c. flour (I use half white, half wheat)
4 eggs
1/2 t salt
4 T butter
2 c. cherries (I use frozen[thawed]to avoid sugar)

(Extra step, if you think of it :) Combine flour and buttermilk and let soak overnight on counter)
The next morning, preheat oven to 400, melt butter in deep dish pie plate. Combine eggs, flour, buttermilk, and salt. Layer cherries in bottom of pie plate. Pour flour mixture on top, and bake until puffy and lightly brown. (This is a good "watching" activity for my kids... it does puff up pretty awesome!) Serve with maple syrup or honey.

I've also used whatever fruit happens to be in season - apples, peaches, strawberries, ... pretty much anything but citrus or melon. :) Hope you enjoy it!
