Menu Plan Monday May 4-10

This week I start my college classes back. I’m taking three wonderful classed, and can’t wait to finish! I just checked and there are 5 papers to write! Ouch! So over the next 15 weeks I am going to be trying more make ahead, or slow cooker recipes, freezing portions just for me for when the kids are away this summer and well just looking for shortcuts!

Monday: Hamburgers and Homemade buns, oven fries

Tuesday: Mexican of course! its Cinco de Mayo people!

Wednesday: We eat at church, but I think I will smoke a ham to have for the freezer and lunches for the rest of the week.

Thursday: Red Beans

Friday: Pizza! We have Pizza Hut Book-It Coupons to use up.

Saturday: Honey Chicken Salad

Sunday: Leftovers, cause what mom cooks on Mother’s Day

Recipe for the week:

Recipe: Hamburger Buns (Bread Machine)

Ingredients

  1. 1 1/2 c. milk (slightly warmed)
  2. 1 Beaten Egg
  3. 2 T. Butter
  4. 1/4 c. sugar
  5. 3/4 t. salt
  6. 3 3/4 c. bread flour
  7. 1 1/4t yeast

Instructions

  1. Place ingredients in order recommended by the manufacturers recommendations.
  2. Set Bread Machine to Dough setting and push start.
  3. Roll Dough on floured surface to approx. 1/2″ thickness.
  4. Cut dough into 3″ rounds Place on baking sheet (I spray with Pam) and brush with butter
  5. Cover and let rise for 1 hour
  6. Bake at 350F for 9-12 minutes, until brown.

    Hi Christie – here’s the recipe I use, adapted from Nourishing Traditions.
    1 c. buttermilk
    1 c. flour (I use half white, half wheat)
    4 eggs
    1/2 t salt
    4 T butter
    2 c. cherries (I use frozen[thawed]to avoid sugar)

    (Extra step, if you think of it :) Combine flour and buttermilk and let soak overnight on counter)
    The next morning, preheat oven to 400, melt butter in deep dish pie plate. Combine eggs, flour, buttermilk, and salt. Layer cherries in bottom of pie plate. Pour flour mixture on top, and bake until puffy and lightly brown. (This is a good “watching” activity for my kids… it does puff up pretty awesome!) Serve with maple syrup or honey.

    I’ve also used whatever fruit happens to be in season – apples, peaches, strawberries, … pretty much anything but citrus or melon. :) Hope you enjoy it!
