New addition to the Farm

Join us in welcoming Mooie Louie to Polka Spot Farm! He was Born just seconds before this picture was taken yesterday afternoon.  We’ve seen plenty of new born cows here, but not watched the actual birth. It was a lesson in biology and animal development for the whole family.

Menu Plan Monday April 27th

This weeks menu is just normal every day stuff for us.

Monday: Mexican : Taco Salads

Tuesday: Hamburgers and Homemade Buns, oven fries

Wednesday: Church has Potluck

Thursday: Red Beans

Friday: Chicken Pot Pie

I thought I would start adding a Recipe for simple meals that I use so here goes.

Recipe: Easy Chicken Pot Pie

Ingredients

  1. 1 Large Chicken Breast
  2. 1 Can Cream of Chicken Soup
  3. 2 Cans of Refrigerated Crescent Rolls
  4. 1 Small package frozen mixed veggies
  5. 2 T. self rising flour
  6. Salt and pepper to taste

Instructions

  1. Boil Chicken breast in seasoned water.
  2. Use 1 package of crescent rolls to line bottom of casserole. Bake using directions on package.
  3. Remove chicken from broth and allow to cool. Cut into bite sized pieces
  4. Add Cream of Chicken Soup to the broth and bring to a simmer, add flour if needed to thicken.
  5. Microwave frozen veggies just until warm.
  6. When bottom layer of crescent rolls are baked, layer veggies and chicken then douse liberally with broth and soup mixture.
  7. Carefully place unrolled crescent rolls on top as a top crust and bake as directed.
  8. Enjoy!

Belated Easter Morning

Easter morning was a little different this year, the top reason it was different is because we were all soo tired we went back to bed! Later on in the morning  Kayla decided to use her lucky confetti egg on Kitty. I’m not sure if Kitty thought being held down and having and egg cracked on her head was lucky or not but Kayla had the giggles, so it was all in good fun.

Austin found the Golden Egg! I’m not sure how much help my kids had but they ended up with 25 of the 55 dollars that was hidden at the church. Austin never gives up on anything, unless he gets his feelings hurt. He’s my little trooper!

My 11 year old Payton, is getting too old for most everything. The hormones are setting in and I’m thinking he’s going to be using a razor pretty soon. He made enjoyed Easter mostly because a girl his age was at the church with her younger siblings. Now the calls and texting are both getting interesting. I really love that he is almost a teenager. Our time spent together this school year has been just what we needed. We share so many things together now that we have never been able to do before.

I am truly blessed by these three kiddos! They are the biggest source of joy in my life today. I pray that one day they will have kiddos of their own that will make them as happy as they make their mama!

Friends that keep me company in the middle of the night when sleep is an elusive dream.
